Today, people around the world are becoming more aware of the relationship between food and health. For years they have been hearing statements from former Surgeon General C. Everett Koop that “70 percent of all Americans are dying from diseases that are directly tied to their eating habits.” And from the American Dietary Association that “… cardiovascular disease, hypertension, cancer, osteoporosis, diabetes, and gastrointestinal problems can all develop as direct results of our food choices. Now, the public knows: saturated fat, cholesterol, and high-calorie foods are literally killing us.”
Too often, Americans per say, they simply want to pop a pill for our high blood pressure or other ailment without giving our bodies a chance to correct the issue through proper diet and exercise. Sure, we may try to eat a little better by eating chicken and pasta instead of steak and mash potatoes, but that is through our own ignorance and what we have been taught. What we need to do is to get more serious about our health and what we eat by “Eating to Live” and not Living to Eat. We need to help our bodies overcome many of the common ailments that afflict our population because of our dietary ignorance and lack of self discipline.
We are simply overfed but undernourished. To prove this we just need to take a look the next time we are in public. We see sickly obese people everywhere, in malls, airports, and Walmarts all across our nation. They get plenty of calories but not enough nutrients. This is through a lack of education, plenty of fast-food meals, poor eating habits and a lack of self discipline to eat correctly.
The term “phytochemicals” refers to a wide variety of compounds produced by plants. They are found in fruits, vegetables, beans, grains, and other plants. Scientists have identified thousands of phytochemicals, although only a small fraction have been studied closely. Some of the more commonly known phytochemicals include beta carotene, ascorbic acid (vitamin C), folic acid, and vitamin E.
Some phytochemicals have either antioxidant or hormone-like actions. There is some evidence that a diet rich in fruits, vegetables, and whole grains reduces the risk of certain types of cancer and other diseases, and researchers are looking for specific compounds in these foods that may account for the beneficial effects in humans. Available scientific evidence does not support claims that taking phytochemical supplements is as helpful as consuming the fruits, vegetables, beans, and grains from which they are taken.
